GINGER COOKIES
Ingredients:
– Almonds flour (80g)
– Ginger powder (1,5 teaspoon = 4,5g)
– Oats flour (200g)
– Egg (1 unit)
– Vanilla flavouring (1 teaspoon = 5g)
– Powdered cinnamon (1 teaspoon = 5g)
– Dates (200g)
– Virgin extra olive oil (50ml)
– Salt (1 teaspoon = 1g)
– Baking powder (15g)
Steps to make the recipe:
1. Hydrate dates with hot water during 10 minutes. In the meantime, in a big bowl, mix dry ingredients: flours, baking powder, cinnamon, ginger and salt.
2. Remove part of the water from the dates and blend it; we are going to obtain a dates paste.
3. Mix and remove dates pasta with liquid ingredients: egg and oil.
4. Mix all of the above together.
5. Put the paste between 2 baking papers (it’s important to use 2 papers because the paste
it’s sticky). When you have it, keep it in the fridge during 30 minutes.
6. Make the cookies. When you have it, put it in the fridge again during 10 minutes while
the oven is warming up (180oC top and bottom heat without fan).
7. Cook the cookies during 12 minutes, more or less (depending on the oven).
8. Let the cookies cool down and enjoy it!
HEALTHY “FERRERO ROCHER”
Ingredients:
– Toasted hazelnuts (200g)
– Dates (100g)
– Cocoa (30g)
Optional:
– Chopped hazelnuts
– Chocolate (≥85% of cocoa)
Steps to make the recipe:
1. Hydrate dates with hot water during 10 minutes. In the meantime, separate 10-15 hazelnuts from de 200g of those.
2. Blend the rest of the hazelnuts with the dates and the cocoa until you have a paste.
3. Make balls with the paste and introduce a toasted hazelnut inside of those.
Optional:
4. Melt the chocolate.
5. Add chopped hazelnuts on the chocolate.
6. Baste the balls on the chocolate and hazelnuts mix.
7. Keep it in the fridge for at least one hour.
8. Enjoy those healthy chocolates!
